Recipe: Brussel Sprout Salad

1 lb Brussel Sprouts
1/4 cup Pine Nuts
1/4 cup Vinegar (Champagne or White Wine)
1 cup Olive Oil
1 Lemon
1 Tsp Roasted Garlic Seasoning
or Fresh Garlic
1 Tsp Onion Powder
1 Tsp Salt & Pepper each
Squeeze of Honey
1/2 cup Pecorino Cheese

In a food processor, shred the Brussel Sprouts or thinly slice by hand cutting.

Dressing Blender method:

Blend all ingredients in a blended.

Hand mixed method:

In a mixing bowl, add vinegar, squeeze lemon, add garlic seasoning or fresh minced garlic, honey, salt and pepper.

Whisk while you drizzle in olive oil until vinegar and oil is blended.

In a skillet on medium heat, add pine nuts. Stir often for a few minutes until the pine nuts become fragrant and slightly brown.

Add shredded Brussels to a Salad Bowl, toss in the Lemon Vinaigrette dressing, massaging dressing into Sprouts.

Add a heaping portion of Pecorino Cheese and Pine Nuts. Finish with fresh cracked pepper.

Serve and enjoy.
