Feta cheese dip with roasted tomatoes is overwhelmingly refreshing with a burst of flavors of tart, creamy, sour, sweet, and robust. The perfect dip to a charcuterie board, served as an appetizer, or simply a fulfilling snack.
The first bite of this dip literally took my breath away. It was the full eye roll into the back of my head in an almost food orgasmic way, lol. But no, seriously, this is one of my favorite dips.
Tomatoes are a year round favorite in a lot of recipes and this dip is perfect any time of the year. I enjoy this recipe with a lightly toasted sourdough toast. However, it can be enjoyed with Pita bread, crackers, etc.
Step 1: Slice Tomatoes and Shallots
For this recipe, you simply start with cutting the tomatoes in half. You can easily roast them whole if you’d like, but to get enough tomato to cheese ratio, I like them cut in half. Feel free to add more tomatoes if you’d like.
Step 2: Roast Tomatoes in Oven
In a baking dish, place the tomatoes, and sliced shallots. Drizzle with Olive Oil, season with Salt and Pepper and fresh Oregano.
Step 3: Prepare Feta Cheese Dip
In a mixing bowl, add in softened cream cheese and feta cheese. Drizzle in Olive Oil, Honey, Lemon juice, Salt & Pepper. Whisk until you get your desired texture. You may also blend in a blender and smooth out cheese dip by adding a bit of cream or water.
Step 4: Plate Feta dip and Roasted Tomatoes
In a deep bowl, place Feta cheese dip and add Roasted tomatoes over half.
Step 5: Garnish with fresh herbs and cracked pepper, serve and enjoy!
To complete this dip, I like to drizzle a bit of oil, crack fresh black pepper and add fresh herbs. I serve this dish with fresh toasted sour dough bread, making sure to get a hefty equal scoop of cheese to tomato ratio. Serve and enjoy!
